THE OWNERS ANNE AND ARCHIE WILLETT LIVED IN DALLAS, TEXAS FOR MANY YEARS AND LEARNED THE BARBEQUE TRADE FROM FRIENDS WHO OWN SEVERAL "BAKERS RIBS BBQ" IN THE DALLAS AREA. THE PIG OPENED WITH A "BANG" IN MARCH OF THAT YEAR DURING THE SPRING PILGRIMAGE AND HAS BEEN "SMOKING" EVER SINCE.

WE ARE CONCENTRATED ON A LIMITED MENU SPECIALIZING IN SMOKED MEATS. ALL OF OUR MEAT COMES IN FRESH AND IS SMOKED ON A CUSTOM MADE SMOKER USING GREEN OAK FOR A MINIMUM OF 16 HOURS. THE PIT NEVER GOES OUT. THE MEAT IS SEASONED WITH OUR OWN SPECIAL RUB AND IS DRY SMOKED. THE SAUCE IS ALSO OUR OWN RECIPE AND IS SERVED HOT ON THE SIDE. IT HAS THE PERFECT BALANCE OF SWEETNESS AND TANGINESS AND IS TOMATO BASED. ALL OF THE SIDE DISHES WE SERVE ARE HOMEMADE USING FRESH INGREDIENTS FROM THE DILL POTATO SALAD TO THE BLACKBEAN AND CORN SALAD.

ANNE BEING BORN AND RAISED IN THE SOUTH (NATCHEZ) IS A NATURAL COOK LIKE A LARGE MAJORITY OF SOUTHERN WOMEN. "THE WAY TO A MAN'S HEART IS THROUGH HIS STOMACH" WAS A MOTTO THAT SHE WAS RAISED WITH AND HAS CARRIED IT OVER INTO THE LARGE MAJORITY. THE PIG OUT AIMS TO PLEASE.
